contains: lutein\, one of the best defenses against cataracts\, cancer\,
and aids in digestion\, 20% rda dietary fiber\, over 300% rda vitamin A
\, and 1000% of rda vitamin K. Think of Popeye and eat more spinach. Plu
 s\, it&rsquo\;s so easy to make-soak/rinse\, chop in soups\, stews\, sal
 ads\, stir frys\, blanched\, or boiled. Some suggestions-creamed spinach
 \, spinach/feta rice\, stirfry\, or quiche to name a few.\nKale facts:\n
Fact #1-estimated daily requirements for one cup contain 180% of Vitamin
 \, 200% of Vitamin C\, 1000% of Vitamin K\, 15% of Vitamin\, 15% calcium
 \, 40% magnesium\, and 5% fiber.\nFact #2-contains the phytonutrient lut
ein which protects against cataracts and atherosclerosis\, and increases
antioxidant (prevents cancer) activity.\nFact #3-binds bile acids (aids
digestion) and lowers cholesterol\, reducing the risk of heart disease.
\nAnd\, also some suggestions: it can be boiled\, steamed\, stir-fried\,
  or eaten raw\, used in stews\, soups\, pastas\, salads\, smoothies\, or
made into chips. You can put kale in practically everything you eat or
drink-except coffee\, tea or cocktails. We like to use the leafy portion
and put pasta in the kale. Cook the pasta separately\, and toss the shr
edded kale in for a few minutes. Adding butter\, bacon\, and parmesan ch
eese can give it a richer flavor. If you would like a detailed recipe fo
r our kale pasta\, go to our website atdffarms.com\nThe goods on broccol
i:\nOne of the most nutritious vegetables containing anti-carcinogens\,
anti-aging\, fiber\, minerals\, and large amounts of vitamin A. Scientif
ic research show that raw broccoli can reduce the risk of bladder cancer
by 40% (three servings a month!) Further\, this super veggie not only h
elps reduce the chance of cataracts\, but also\, may prevent colon cance
r\, according to the American Journal of Clinical Nutrition.\nEat more g
